Camp Slumber Party- and The S'Mores Cupcake Hack

This weekend we had a slumber party for D's 9th birthday... a house full of six 9 year old girls is not for the weak!  But, when it was over, we were surprised how easy it was!

I have spent the last eight years planning elaborate birthdays with themed menus and hand made decorations (ask me about building a "punch pinata" and I still break out in hives) but the beauty of the older girls sleepover was that they wanted nothing to do with any of it... D wanted to roast hotdogs over the fire pit- DONE!  She wanted a tent in the backyard to hang out in- DONE!  We pulled together some very camp-themed party favors including flashlights twig pencils, and compass key-chains  that the girls could hang on their backpacks.  

Then there was the cupcakes... s'mores cupcakes were the request.  But google only offered "from scratch" recipes, and I am not a "from scratch" mom.  Then I found this amazing hack!  Brace yourself- it is too easy...

S'mores Cupcakes From Mix

 

box yellow cake mix prepared according to box
1 cup crushed graham crackers
1/2 cup mini chocolate chips
1 jar marshmallow creme
Prepare the cake mix as directed on the box.  Fold in the crushed graham crackers and chocolate chips.  Bake according to directions on the box.
Allow cupcakes to cool completely
Place on generous dollop of marshmallow creme on top of each cupcake (don't spread it, just drop it in the middle)  Line up the cupcakes in manageable batches on a cookie sheet- this is fore easier handling.  Broil cupcakes under a high broiler for 1-2 minutes.  The heat will spread and smooth the marshmallow creme.  Watch closely as the marshmallow creme browns- golden brown turns to burned quickly!
Allow to cool, and serve.  These were a hit- and just what the birthday girl wanted!!
